An Aga does not have a temperature dial, so every recipe written for a normal oven has to be translated into the right Aga oven and the right runner. Tell us the temperature your recipe asks for and whether you have a 2-oven or 4-oven Aga, and we will tell you where to put the food. The part people miss is the cold plain shelf: on a 2-oven Aga it is the trick that turns the fierce roasting oven into a gentler baking oven.

Aga ovens are cast iron and heat by radiation, so they behave like a conventional oven rather than a fan oven: a fan recipe is run about 20°C hotter in equivalent conventional terms, which we do for you before choosing the oven. Runners are the ridges the grid shelf slides onto, counted from the top, so the first runner is the hottest position and the oven floor is the coolest. Aga temperatures vary a little between models and with how hard the Aga is working, so treat the first bake as a test and watch it.
